Serves 2

Salad

  • Lettuce of choice 
  • ½ cup cherry tomatoes
  • ½ cup red cabbage 
  • ⅓ cup sweet corn 
  • 2 VeganReady Nature’s Filets

Dressing 

  • 2 ½ tablespoons tahini
  • Juice from ½ a medium lemon
  • 1 tablespoon maple syrup
  • 1 pinch sea salt (optional)
  • 1 clove garlic, minced (optional)
  • Approximately 3 tablespoons of water 

Optional Toppings 

  • Pinch of sesame seeds 
  • Pinch of pumpkin seeds 
  • Sprig of fresh coriander, chopped

Method

  1. First fry the Nature’s Filets in some oil until golden crispy. Once cooked, slice into strips. 
  2. Whisk up all dressing ingredients aside from the water, then drizzle in the water until it reaches your desired consistency.
  3. Arrange the salad vegetables in bowls, then drizzle the dressing over, keeping some on the side to dip the Nature’s Filets in. Top with the Nature’s Filets, and optional toppings if you wish.
